Renowned mixologist and legendary bar guru Chris Edwardes has forged a unique path through the bar scene, bringing his particular brand of alchemy to a vast array of illustrious venues including The Jazz Café, The Groucho Club, Atlantic Bar & Grill, as well as setting up and running the bar at Damien Hirst’s iconic Pharmacy for a year before starting the GE.Club at Conran’s Great Eastern Hotel.

Together with his wife, interior designer Amanda Blanch they set up the much-respected, multi-award-winning boutique hotel Blanch House in Brighton, before moving to Ibiza to run Hidden Bar, shortlisted as one of the worlds 50 best bars.

They currently dwell in Croatia where they’ve created the award-winning Hidden House Hvar – a 300-year-old Dalmatian stone townhouse located along one of Stari Grad’s enchanting ancient alleyways and just moments from the beautiful harbour and crystal blue waters. Hidden House offers three individually styled designer suites within the beautifully restored stone-built townhouse.

We’re absolutely thrilled that Chris has hand-crafted a bespoke cocktail especially for us. ‘Budding Limerance’ is a lightly invigorating, wild and wellness inspired cocktail that captures the very essence of all things AMLY.

We’ll be offering this enchanting elixir to guests at our next gathering on the land and sharing the secret ingredients with you so you can create your own.

Q: You’ve travelled far and wide, leaving a blaze of bar industry awards in your wake, finally settling in Croatia at the exquisite Hvar House. How much does your location influence your work? Do the climate and local ingredients inspire your work?

Naturally all of these things are a factor, the seasons, what is growing in the garden, the environment within which i am working, what is available from local suppliers, foraging and the requirements of the people i am working for.

Q: A tailor chooses distinct fabrics to create a bespoke suit, a composer chooses the right instruments to compose his Magnum Opus: how does a mixologist begin the process of choosing that very first flavour when crafting the perfect new cocktail?

Inspirations come from many sources, recently i discovered wild Myrtle berry bushes so i made a liqueur from them using Flower Garden herbal tea which inspired a gin based cocktail called a wild berry sour.

Q: You’ve created the most sublime bespoke cocktail for Amly, we’re completely bewitched with ‘Budding Limerance’ and can’t wait for our readers to try the recipe. What advice would you give to a fledgeling mixologist?

Read as many books as you can

Work in as many different style bars as you can

Remain humble and open minded

Be passionate about your art.

Q: What’s the rarest ingredient you’ve ever sourced for a cocktail and to what lengths did you go to find it?

To be honest, I have never tried to source anything that isn’t readily available, it’s no good finding something if you can’t share it.

Q: What has a lifetime of mixology and crafting your unique brand of alchemy taught you about life?

One day there will be a book that I hope will go some way to answering that question, however in a sentence.

To live, to love, to bounce back and most importantly to be happy.

50mls Jasmine Tea

25mls Dry Sherry

25mls Lillet Blanc

25mls Vanilla and Apple Cordial

(Gold rimmed highball) Shake and Dump.

Add Apple wheel.
